Pea Soup with celery

Ingrediënts: 2 cups green split peas. 1 1/2 cups chopped celery. 3 1/2 litres water. 1 1/2 teaspoons salt. 1 kg pork-steak. 4 leeks, 1 1/2 cups chopped. 250 gr. smoked sausage. Salt and pepper.
Recipe: Pea Soup with celery is a winter soup and can be eaten as a main dish. Soak the peas in 3 cups of cold water for about twelve hours. Add enough water to make 3 1/2 litres. Add salt and bring to the boil. Skim, and then add the pork, leeks and celery. Simmer for about four hours, until pork is quite tender. Half hours before serving add the sliced smoked sausage. Prepare toasted bread to serve with the soup. The soup thickens the longer it stands and will taste much better the second day.
