Ingrediënts: 1 kg eggplants. 2 garlic cloves. 1 small onion. 1 spoon yoghurt. 1/2 cup olive oil. Salt and pepper. 6 servings.
Wash the eggplants and squeeze, pierce them with a fork. Bake them for approx. 1 hour or until they become tender. Peel and mash the eggplants when they are done. Add olive oil and yoghurt to the mashed eggplants and salt and pepper to your taste.go back to list
