Chick Pea Soup
Ingrediënts: 350 gr. chick peas. 150 ml olive oil. 2 medium onions. Juice of 2 lemons. Chopped parsley. Pepper. Salt.
Soak the chick peas for about twelve hours. Drain and rinse when soaked. Put the chick peas in a medium sized pan, cover with water to about 2.5 cm above. Boil and skim with a spoon until the water is clear. Add half of the parsley, pepper, olive oil and the chopped onion. Let it simmer for about 90 minutes or until the chick peas are very soft. Add lemon juice, the rest of the parsley and salt. Stir and serve. (For 4 persons).go back to list
